Italian Sausage and Summer Squash Skillet

Did I mention we eat a lot of squash in the summer?  Squash cooks so fast that it makes a wonderful, healthy lunch.  While squash alone can be pretty bland, this recipe is full of flavor.  Here’s how I fix my my favorite squash skillet.

Ingredients:

  • Palm Shortening or oil of choice
  • 1 Large Yellow Onion, chopped
  • 1/2 Pound Italian Sausage Links, sliced
  • 9-12 Small Summer Squash, sliced
  • Italian Seasoning
  • Salt and Pepper

Directions:

  1. Heat oil in skillet.  Cook onion and sausage until onion is clear and sausage is brown.
  2. Add squash and season liberally with Italian seasoning, salt and pepper.  Cook until squash is tender.

      Hi Rachel, Palm Shortening is similar to coconut oil but it comes from the palm tree. It is flavorless. You can read more here http://www.tropicaltraditions.com/organic_palm_shortening.htm I buy my palm shortening in bulk from tropical traditions but you can by the spectrum brand in the Kroger health food section.

      Sausage and squash sounds yummy! I will try it with olive oil which I use all the time. I was diagnosed with ‘leaky gut’ after many blood tests which causes inflammation inside and outside also. Lots of itchy rashes and pain in head, neck, back. I take lots of vitamins and minerals to build me back up. Thank for your website!

    This was my supper tonight. Super delicious! And easy (at least, for just me eating…if I were doing it for my whole family (8-10 depending on the day) I might rethink the easy part…that’s a lot of squash to chop and we wouldn’t have a big enough skillet to do it all at once, but a good lunch idea when there is only a portion of the family home)

    Loved this! I only had cajun sausage which kinda worried me. It still came out great though. Next time I will try italian sausage and use coconut oil. I also liked how affordable it was to make. Thanks
