Make a Fruit Rainbow for St. Patrick’s Day!


Saturday is St. Patrick’s Day.  Wouldn’t it be fun to celebrate with a beautiful rainbow shaped fruit salad like this one at Homemade Serenity?  My kids would love this!

Traveling with Food Allergies Food, Part Two

 

Last week I received an e-mail from a Real Food, Allergy Free reader asking for traveling help.  She is planning to take a road trip at the end of the month.  Her son has severe food allergies, so stopping at restaurants is not an option.  You can read her e-mail and part one of the series here.

Ground Beef and Potato Hash

I was feeling a little under the weather this weekend. When lunchtime sneaked up on me, I needed to fix something simple.  I found a package of ground beef in the fridge and sprouting potatoes in the pantry.  Ground beef hash it was.

Ground beef hash is a frugal, kid and allergy friendly meal can be thrown together quickly.  The secret to good hash is to season it liberally, otherwise it can be rather bland.

Some of the kids topped their ground beef hash with cheese and some of them topped it with ketchup.  Three out of four of them had two helpings.

All of my life, all I’ve wanted to do is to help people. I can remember sneaking out to the TV room late at night when I was a little girl and watching those shows where you can adopt a starving child in Africa for a few bucks each month…and pretty much save their life. I used to sit there and cry watching those poor children with bugs crawling all over them, and I so wished that my parents would “adopt” them. Even at a young age, it was hard for me to see that there were people out there who were hungry and sick and suffering; and I just couldn’t accept that there could be such injustices in the world. I desperately wanted to DO something to help them!

Traveling with Food Allergies, Part One

I received the following email from a Real Food, Allergy Free reader:

…I wanted to ask you if you had any suggestions for allergy friendly foods to take on a road trip. We are going out of town later this month and staying in a hotel for a few days. My son is 20 months and has life threatening allergies to egg, milk, wheat, peanuts, and soy.

We can’t feed him anything from a restaurant (except applesauce) because of potential cross-contamination, so I’m planning on packing all his food. I’m still nursing so milk isn’t a problem for him. I will definitely be bringing the banana chocolate chip muffins along as those are his favorite and I thought the pouch tuna packets for protein. Any other ideas?

I thought it was an excellent and timely question with spring break coming in just a few weeks. I’ll share my thoughts, and I’d love for you all to jump in with your ideas in the comment section. Look for part two of this article which includes lists of foods that travel well and meals that can be prepared in a hotel room.  This should be fun!
