Chocolate {Avocado} Pudding (dairy-free)

 

Avocados, honey and cocoa?  It’s another one of those things like beans in pancakes that sounds disgusting but, trust me, it works!  No, it doesn’t taste the same as that box stuff, but I promise it’s good!  I don’t need to tell you how avocados are good for you.

 

Chocolate {Avocado} Pudding

Makes 2 small cups

Ingredients:

  • 1 Avocado
  • 1 Banana
  • 1 cup Milk Alternative (we use rice milk or coconut milk)
  • 2 Tbsp Honey
  • 1/4 cup Cocoa Powder
  • 1 tsp Lemon Juice

Directions:

  1. Blend in a food processor until smooth and creamy.
  2. Pour into individual cups and refrigerate for 1 hour.

Double Chocolate Chunk Oat Muffins

A few weeks ago Enjoy Life Foods sent me a package of their Enjoy Life Semi-Sweet Chocolate Mega Chunks to review.  I decided to try the mega chunks in my favorite Double Chocolate Chip Muffin recipe.  As I expected, they were awesome!

These Double Chocolate Oat Muffins are moist and sweet but not too sweet. The kids enjoy these for breakfast or an afternoon snack.

Make a Fruit Rainbow for St. Patrick’s Day!


Saturday is St. Patrick’s Day.  Wouldn’t it be fun to celebrate with a beautiful rainbow shaped fruit salad like this one at Homemade Serenity?  My kids would love this!

Dairy-Free Hot Chocolate

 

All it takes is a little chill in the air for my kids to request hot chocolate.  I can’t say I blame them.  Hot Chocolate is such a warm and soothing drink.

Cinnamon Sweet Potato and Apple Bake

I know what I’m bringing to Mom’s for Christmas brunch this year!   This cinnamon sweet potato and apple bake turns the humble sweet potato and apple into something a little fancy without any fancy prep work.

Once you pop the cinnamon sweet potato and apple bake in the oven, the smell of cinnamon starts floating through the house.  It smells like Christmas.

Two Ingredient Pumpkin Bread with Apple Cider Glaze

After seeing a two ingredient pumpkin cake recipe using only a box of cake mix and a small can of pumpkin puree on pinterest,  I remembered that somebody mainstream makes a gluten-free cake mix now.  My wheels started spinning.  I decided to give it a try.

Baked Pears Drizzled with Real Maple Syrup


Seriously simple baked pears drizzled with real maple syrup.  We have enjoyed these just as they are but I’m sure they would be divine a la mode.  My kids cannot get enough of these!

Ingredients:

  • 4 Pears
  • 1/2 cup Maple Syrup

Directions:

  1. Preheat oven to 400.  Peel, slice and core pears.  Place pears in a baking dish.
  2. Drizzle with maple syrup.  Bake for 15 minutes.  Turn pears over and cook for 15 minutes more or until pears are tender.

You may also enjoy Grilled Peaches and Dairy-Free Caramel Dip/Sauce for your apples.
