Are you enjoying the drop in temperature as much as I am?  I shared on Facebook that my family and I spent some time in Gatlinburg, TN last week.   The weather could not have been more perfect.  The kids and I had a blast exploring hiking trails and discovering waterfalls. After a week in the hospital with my 5 year old, I am excited to get back to our regular routine.  We have eaten more processed food the last couple of weeks than I am willing to admit.

Monday – Coconut, Curry, Chicken and Rice Soup Recipe

Tuesday – Jamaican-style Black Bean and Coconut Cornbread Bake

Wednesday – Rotisserie Chicken in the CrockPot

Thursday – Pancakes, Bacon and Fruit

Friday – Coconut Chicken with Apricot Sauce

Tuesday – Tacos using Gluten-Free Taco Seasoning, Fresh Mexican Corn Salad

Wednesday Summer Squash and Chicken Skillet (Use leftover rotisserie chicken.  Yes, we are still swimming in squash!)

Thursday –  Easy Pulled Barbecue Chicken Beef, Broccoli

Friday – Chicken Fried Rice and Peas (Use leftover rotisserie chicken.)

Saturday Sloppy Joes, Honey Carrots

Sunday – Leftover Buffet

Menu Plan Monday – August 8, 2011

 

I picked up ten locally pastured chickens over the weekend.  Next month will be the last month they are availbale in my area.  I will get ten more chickens and that should hold me over until next spring.  My freezer is full!  When I placed my order back in the spring, I had the intention of cooking one chicken per week.  I have somehow gotten out of the habit of doing this.  I am hereby committing to cook one chicken per week from now until I have room in my freezer again!

Monday Mojo Chicken, Sauteed Green Beans from the garden

Tuesday Goosemeat Sandwiches (No, it’s not really goose!)

Wednesday – Chicken Fried Rice

Thursday –  Spaghetti

Friday – Birthday Party!

Saturday Summer Squash and Zucchini Skillet

Sunday – We have a potluck dinner at Bible study. Last week I took Nancy’s Green Beans except I used summer squash and zucchini instead of green beans.  It was a hit!

August already?  This summer has flown by.  My mom always told me that time passes faster the older you get.  How right she was.

Friday – Family cook-out to celebrate my sister making Team USA.  I’m bringing fruit salad.

Saturday – Pizza Rice

Sunday – We have a potluck dinner at Bible study. I’ll take whatever the host requests.  Last week I took baked beans.

Allergy-Free Menu Plan Monday – July 25

My menu plan is a little different this week as we will be spending several days traveling. My sister is representing Team USA in the Young Rider Dressage Championship. We are so proud! She has worked very hard to make the team. I can’t wait to see her represent!

We’ll only be eating 3 dinners at home but I’ll need to plan plenty of snacks for the road.

Menu Plan Monday – July 11

I thought I’d try a new feature.  It’s called Menu Plan Monday. Every Monday I will share what we plan to eat for the week. 

I made four loaves of bread today so we can eat lots of sandwiches for lunch.  I also made a double batch of chocolate chip cookies so Bella will have a special treat at VBS this week.
