Super Simple Potato Soup

I picked up a bag or two of organic potatoes for $.30 per pound and decided I had to make an allergy-friendly potato soup. It turned out so good that I made it twice in one week! It is super simple and extremely frugal.  You can add milk or milk substitute, but I actually like it better without it.

Dairy-Free Potato Soup

Ingredients:

Directions:

  1. Place potatoes and onions in a large pot.
  2. Add enough stock so that it doesn’t quite cover the vegetables.
  3. Bring to a boil.  Lower heat, cover and simmer for 25 minutes or until potatoes are very soft.
  4. Use a potato masher to crush the potatoes some.  You want your soup to be chunky.
  5. Thin the soup to desired consistency by adding a little milk substitute.
  6. Salt and pepper well.
  7. Serve with real bacon bits and Daiya cheddar cheese.

    This soup looks awesome, and I can’t believe how simple it is. Amazing. I just bought a huge bag of potatoes from Costco, and I also bought some bacon that’s sitting in my freezer waiting to be used. Now I know what I’m making! I wonder how this recipe would freeze after cooking it once… (I’ve been trying to make some more freezer/make-ahead meals). Have you ever tried freezing it?

      Welcome Gaby! No I have heard potatoes are the one thing that do not freeze well. It changes their consistency or something. There is one freezer recipe for mashed potatoes that uses cream cheese that is supposed to be good but we can’t do the cream cheese so I haven’t tried it. You could google it though.
