Menu Plan Monday – July 8

August already?  This summer has flown by.  My mom always told me that time passes faster the older you get.  How right she was.

Here’s what we are planning for dinner this week:

Monday – Sloppy Joes and Green Beans

Tuesday – Soft Tacos and Taco Potato

Wednesday Spaghetti

Thursday Easy Pulled Barbecue Chicken

Friday – Family cook-out to celebrate my sister making Team USA.  I’m bringing fruit salad.

Saturday – Pizza Rice

Sunday – We have a potluck dinner at Bible study. I’ll take whatever the host requests.  Last week I took baked beans.

Allergy-Free Menu Plan Monday – July 25

My menu plan is a little different this week as we will be spending several days traveling. My sister is representing Team USA in the Young Rider Dressage Championship. We are so proud! She has worked very hard to make the team. I can’t wait to see her represent!

We’ll only be eating 3 dinners at home but I’ll need to plan plenty of snacks for the road.

Beefy Zucchini

Here’s another quick and easy zucchini dinner.  It is thick and hearty so it can be served as is or over rice or pasta.  A side salad would make a great addition. 

Ingredients:

  • 1 small Onion, diced
  • 2 pound Ground Beef
  • 2 cans Fire Roasted Tomatoes
  • 3 Zucchini, chopped
  • 2 tsp Italian Seasoning
  • Salt and Pepper

Directions:

  1. In a heavy skillet, cook ground beef and onion until beef is done and onions are clear.
  2. Add tomatoes, zucchini, seasoning, salt and pepper and cook until zucchini is tender.

You may also enjoy Italian Sausage and Summer Squash Skillet and Cheeseburger Zucchini Boats.

I saw this deal a couple of weeks ago.  I was really excited about it but didn’t post it because there were some bad customer reviews.  There were several complaints that the shipment arrived with broken packaging and the flour was everywhere.  I decided I needed to try it out myself before I posted it. 

I am happy to report that my package arrived just fine.  When I opened the box, I found there were 6 paper bags wrapped inside a plastic bag.  I also found the sweet smell unique to coconut flour.  I seriously love that smell.  This is a product I can recommend! 

Of course, they sold out before I could recommend it to you last time.  I don’t know how long the deal will last this time so hurry up!

Cooling and Refreshing Frozen Grapes

 

Feelin’ hot, hot, hot!  Try some frozen grapes.  Don’t they look refreshing?  When I find grapes on sale (which is rare lately!), I flash freeze them on a baking tray and then store them in a gallon size baggie.  Frozen grapes are a perfect treat on a hot day.  They are cooling and revitalizing.  The kids love them.  Just be aware that one could easily choke on these mini popsicles.  Cut them up for younger children.
