Caramelized Brussels Sprouts with Bacon Pieces

I never liked brussels sprouts growing up.   Even now, when I see them swimming in some kind of butter sauce at the local buffet, I pass them up.  No, thank you!

I am determined to eat more veggies.  So when I heard about caramelized Brussels sprouts, my ears perked up.  I mean, I can eat just about anything caramelized.

After googling a few recipes, this is what I came up with: caramelized Brussels sprouts with bacon pieces.  It’s really good.  At first bite, it tastes sweet and smokey.  While there is a mild cabbage after taste, you hardly know you are eating Brussels spouts.  In fact, because the Brussels sprouts are sliced into ribbons, it doesn’t even look like you’re eating Brussels sprouts.

The ultimate recipe test is always whether or not my kids eat it.  I am happy to report, two of my kids ate their sprouts without too much complaining.  In my opinion, that’s a win for Brussels sprouts!

Caramelized Brussels Sprouts with Bacon Pieces

  • 2 slices Bacon, chopped
  • 1/4 cup Onion, chopped
  • 12-14 large Brussels Sprouts, sliced thin
  • 1 clove Garlic, minced
  • 2 Tbsp Sucanat or Brown Sugar
  • Salt and Pepper to taste

  1. Cook bacon pieces and onion in a large skillet until bacon is cooked and onion is translucent.
  2. Add brussels sprouts and garlic and cook 5 minutes or until tender.
  3. Stir in sucanat/sugar and salt and pepper.
  4. Enjoy!

  1. Wow, that looks delicious! I bet it is good even without the sweetener. Of course, I do happen to like brussels sprouts, as long as they are not boiled. I will have to try this recipe. Thanks!!

My husband buys brussels sprouts and buys them often. So much so that lately I have been getting tired of them. We usually marinate them in Apple Cider Vinegar, Bragg Liquid Aminos and Olive Oil. I’m not fond of them buttered either. We always boil them. I’ve never thought of putting them in a pan, so I had to stir fry them with some hamburger. That was ok. Today we’re going meatless and I chopped up carrots with them, drizzled 2 Tablespoons or Raw Honey and squirted some Bragg Liquid Aminos into it. We’ll eat it over some brown rice that I seasoned with rosemary and ginger before cooking.

Thanks for the post. I look forward to more Allergy Free Wednesdays!!

Thanks for the ideas April! Honestly, the only way I have ever seen them cooked is boiled in fake butter sauce. No wonder I hated them!
